Instaurator is a coffee and business consultant with a world renowned reputation for his coffee tasting and management expertise. He has been a specialty coffee roaster for 33 years and has helped to establish roasting businesses in Vancouver Canada, Tokyo Japan, Seoul Korea and in Sydney Australia.

He established his own wholesale specialty coffee factory and retail chain of coffee shops now known as Danes Gourmet Coffee, prior to founding Michel's Espresso in 1999. By 2006 when he sold out of Michel's it was rated as the leading coffee chain in Australia by BIS Shrapnel. In this time he oversaw like-store coffee growth of 340% as well as the expansion from 70 to 350 stores.

He has been responsible for every aspect of coffee including selecting and buying green coffee, establishing the coffee factory and implementing Quality Assurance as well as national Barista training programs and espresso machine procurement and maintenance programs.

As Chairman of the Australian Coffee & Tea Association he was instrumental in establishing the barista training standards currently used by Government Registered Training Organizations nationally.

He was a co-founder of the Australasian Specialty Coffee Association (AASCA)

He trained World Barista Champion Paul Bassett and roasted his coffee to help him win. He judged at numerous World Barista Championships and was appointed in 2004 as Executive Director of the World Barista Championship Ltd London.

He travels to coffee estates around the world and has purchased some of the world's best coffee beans including the first Australian Cup Of Excellence winning coffees from Guatemala 2003 and Brazil 2006 and created Gold Medal winning coffee blends.

He has worked extensively with pioneering specialty coffee research at Southern Cross University and leading coffee growers.

Instaurator was a 'coffee luminary' at the Specialty Coffee Association of America in 2002 along with Dr Ernesto Illy, among others .

In 2008 he established Espressology as an exclusive specialty coffee roaster for a handful of highly discriminating clients. The business continues to innovate and attract some of Australia's leading coffee professionals with its unique bespoke contract roasting.

His innovation, thirty three years of coffee experience and unique global vision arm him with a unique insight into the world of espresso. He is the author of the definitive book The Espresso Quest.
